Cute Meringue Nests For Spring

Easter Meringue Nests | She's Not Cookin'

Ingredients:

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • A pinch of salt

  • Fresh mixed berries (strawberries, blueberries, raspberries)

Instructions:

1.Preheat and Prep:

Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper.

2. Make the Meringue:

In a large, clean bowl, beat the egg whites with an electric mixer on medium speed until frothy. Add the cream of tartar and a pinch of salt, increasing the speed to medium-high. Gradually add the granulated sugar, one tablespoon at a time, continuing to beat until the mixture forms stiff, glossy peaks. Gently fold in the vanilla extract.

3. Shape the Nests:

Spoon the meringue into a piping bag fitted with a large star tip. Pipe the meringue onto the prepared baking sheet, forming small circles with the edges slightly higher than the center to create a nest shape.

4. Bake:

Bake the meringue nests in the preheated oven for 1 to 1.5 hours, or until they are crisp and dry on the outside but still white. Turn off the oven and let the meringues cool completely inside with the door slightly ajar. This slow cooling process helps prevent cracking.

5. Decorate:

Once cooled, carefully remove the meringue nests from the parchment paper. Fill each nest with a spoonful of lemon curd, a dollop of whipped cream, or both. Top with a generous amount of fresh mixed berries and garnish with a mint leaf for an extra touch of freshness.

6. Serve:

These Meringue Nests are best served the day they are made but can be stored in an airtight container at room temperature for up to 2 days. The unfilled meringue nests can be made ahead of time, and then assembled with the toppings just before serving to ensure they remain crisp.
