Sun Dried Tomato & Roasted Garlic Hummus

Embark on a flavorful journey with this Sun-Dried Tomato & Roasted Garlic Hummus, a delectable twist on the traditional Middle Eastern dip. This recipe combines the intense, tangy flavor of sun-dried tomatoes with the mellow sweetness of roasted garlic, resulting in a hummus that’s both rich and captivating. Perfect for entertaining, as a spread on your favorite sandwich, or as a healthy snack with vegetables and pita chips, this hummus is sure to become a staple in your culinary repertoire.

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/3 cup sun-dried tomatoes (not in oil), chopped
  • 1 head of garlic
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil, plus extra for roasting garlic
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Extra virgin olive oil (for drizzling)

Instructions:

  1. Roast the Garlic:
    • Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, exposing the individual cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for about 30-40 minutes, or until the cloves are soft and golden. Let it cool, then gently press the bottom of the garlic head to push out the roasted cloves. Set aside.
  2. Hydrate the Sun-Dried Tomatoes:
    • If your sun-dried tomatoes are very dry, soak them in warm water for about 10 minutes to rehydrate them slightly. Drain and chop into smaller pieces if needed.
  3. Blend the Hummus:
    • In the bowl of a food processor, combine the drained chickpeas, sun-dried tomatoes, roasted garlic cloves, tahini, and lemon juice. Begin to process the mixture, gradually pouring in the 1/4 cup of olive oil as the food processor is running. Blend until the mixture is smooth and creamy. If the hummus seems too thick, you can add a little water to reach your desired consistency.
  4. Season:
    • Add the smoked paprika, salt, and pepper to the hummus. Pulse a few more times to incorporate the spices thoroughly. Taste and adjust the seasoning as needed.
  5. Serve:
    • Transfer the hummus to a serving bowl. Use a spoon to create a well in the center of the hummus. Drizzle extra virgin olive oil into the well and sprinkle the chopped parsley over the top for garnish.
  6. Enjoy:
    • Serve your Sun-Dried Tomato & Roasted Garlic Hummus with an assortment of dipping options like fresh vegetables, pita bread, or chips. It’s perfect for sharing or enjoying as a flavorful snack.
