Triple Berry Tart

Berry Cream Tart Recipe | King Arthur Baking

Embrace the bounty of spring and summer with this Triple Berry Tart, a vibrant and delicious dessert that celebrates the sweetness and tartness of berries. This tart combines the rich, buttery texture of a homemade crust with the creamy delight of a custard filling, all topped with a generous layer of fresh strawberries, raspberries, and blueberries. Whether you’re looking for a show-stopping dessert for a picnic, a family gathering, or simply to enjoy the season’s freshest fruits, this tart is sure to impress and satisfy.

Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 2-3 tablespoons ice water

For the Custard Filling:

  • 1 cup heavy cream
  • 2 egg yolks
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

For the Topping:

  • 1 cup fresh strawberries, hulled and halved
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • Optional: mint leaves for garnish, powdered sugar for dusting

Instructions:

  1. Prepare the Crust:
    • In a food processor, combine the flour, cold butter, powdered sugar, and salt. Pulse until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, pulsing until the dough just comes together.
    • Press the dough into a tart pan with a removable bottom, making sure to push the crust into the edges and up the sides evenly. Prick the bottom of the crust with a fork to prevent puffing during baking. Chill in the refrigerator for at least 30 minutes.
    • Preheat the oven to 375°F (190°C). Bake the chilled crust for 18-20 minutes, or until lightly golden. Let it cool completely on a wire rack.
  2. Make the Custard Filling:
    • In a medium saucepan, whisk together the heavy cream, egg yolks, granulated sugar, vanilla extract, and cornstarch. Cook over medium heat, whisking constantly, until the mixture thickens and comes to a slight boil. Remove from heat and let the custard cool slightly, then pour it into the cooled tart crust. Refrigerate until set, about 1-2 hours.
  3. Assemble the Tart:
    • Once the custard has set, arrange the strawberries, raspberries, and blueberries on top of the custard in a decorative pattern. For a finishing touch, garnish with mint leaves and dust with powdered sugar if desired.
  4. Serve:
    • Carefully remove the tart from the pan by pushing up the bottom. Slice and serve the Triple Berry Tart chilled, allowing the flavors of the creamy custard and fresh berries to meld together beautifully.
